No-bake, no-refined-sugar energy bites packed with medjool dates, raw cacao, almond butter, and hemp seeds.
Medjool dates are nature's perfect binder — naturally sweet, sticky, and loaded with potassium and magnesium. Combined with raw cacao (which contains more antioxidants than blueberries), almond butter for sustained energy, and hemp seeds for plant-based omega-3s and complete protein, these energy balls are genuinely impressive from a nutrition standpoint and even better to eat.
Pulse dates in a food processor until they form a sticky paste — about 30 seconds.
Add oats, cacao powder, almond butter, hemp seeds, coconut, vanilla, and salt. Process until the mixture comes together and holds when pressed. If too dry, add 1 tsp water at a time.
Scoop tablespoon-sized portions and roll firmly between your palms. Roll in extra cacao powder or desiccated coconut.
Place on a lined tray and refrigerate for 30 minutes to firm up. Store in an airtight container in the fridge for up to 2 weeks.
